A Legacy of Character

Devoys stands as a landmark in Johnstown, but its story begins long before our doors opened. Our name is a tribute to Johnstown’s most famous son, John Devoy, the man Pádraig Pearse called “the greatest of the Fenians.” Born in 1842 in the neighbouring townland of Greenhills, his legacy of tenacity and vision is woven into the very fabric of this location.

Managed by Nicola Curran, Devoys represents a new chapter for hospitality in the region. Our culinary direction is led by the acclaimed chef Josef Zammit, former owner and head chef of the award-winning TwoCooks Restaurant in Sallins.

Chef Zammit brings the same creative, high-end philosophy that defined his career to the Restaurant, Cafe, and Bar 1640. While the execution remains refined, the atmosphere is designed for connection, creating a true meeting point for locals, families, and visitors alike.
